Make room for the warm bread basket

A warm biscuit, a slice of quick bread, or a garlic-brushed roll brings a different kind of rhythm to the table. Biscuits, Breads and Quick Bakes gathers twelve recipes for breakfast, supper, and the bread basket, from drop biscuits and cornbread to crackers and one simple yeast roll. Learn to measure flour lightly, stop folding when quick-bread batter is combined, and let yeast dough rise before shaping and baking. Clear center checks and cooling instructions help you decide when a bake is ready to serve. Junction Table by CrownThrive, LLC offers distinct methods for cooks who want to understand what each dough needs.

  • Rub cold butter into flour and drop biscuit dough directly onto a sheet.
  • Fold squeezed grated zucchini into lemon-scented quick-bread batter.
  • Knead and twice-rise dinner-roll dough, then brush with garlic-parsley butter.

Buttermilk Drop Biscuits

8 biscuits · Prep 15 min · Cook 15 min

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon fine salt
  • 6 tablespoons cold unsalted butter, cubed
  • 3/4 cup buttermilk

Method

  1. Heat the oven to 425°F. Line a baking sheet with parchment and leave room for eight separate mounds. Whisk flour, baking powder, baking soda and salt in a broad bowl.
  2. Rub the cold butter into the flour with fingertips until most pieces are pea-sized. Pour in buttermilk and fold with a spatula just until no loose flour remains.
  3. Drop eight equal portions onto the sheet without flattening them. Bake 13–16 minutes, until the tops are golden and the centers no longer look doughy. Cool on a rack for 5 minutes before splitting.

Kitchen note: A light hand keeps the uneven tops tender; avoid pressing the portions into smooth balls.

Substitution: Replace buttermilk with 3/4 cup plain kefir of similar thickness.

Storage: Store fully cooled bakes airtight for 2 days at room temperature, or freeze for 1 month.

Skillet Cheddar Cornbread

8 wedges · Prep 15 min · Cook 25 min

Ingredients

  • 1 tablespoon vegetable oil
  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon fine salt
  • 1 cup milk
  • 1 large egg
  • 1/4 cup melted unsalted butter
  • 3/4 cup grated cheddar

Method

  1. Heat the oven to 400°F. Brush a 9-inch ovenproof skillet with oil and place it in the oven while you mix the batter.
  2. Whisk cornmeal, flour, baking powder and salt together. In another bowl, whisk milk, egg and melted butter; fold into the dry mixture, then fold in cheddar.
  3. Carefully remove the hot skillet and spread in the batter. Bake 22–26 minutes, until the top is golden and a tester inserted in the middle has no wet batter. Rest 10 minutes before cutting.

Kitchen note: The hot skillet gives the base a crisp edge; use an oven mitt on its handle throughout cooling.

Substitution: Use grated Monterey Jack in place of cheddar, keeping the same amount.

Storage: Refrigerate covered at 40°F or below within 2 hours. Use within 3–4 days; reheat leftovers to 165°F.
