Chicken Pesto Crunch Wraps

4 servings · Prep 20 min · Cook 12 min

Ingredients

  • 1 pound boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ cup basil pesto
  • ¼ cup plain yogurt
  • 4 large flour tortillas
  • 1 cup shredded carrots
  • 4 lettuce leaves
  • 1 cucumber, cut into sticks

Method

  1. Cut chicken into ¾-inch strips and season with salt and pepper. Heat oil in a skillet and cook chicken 8–12 minutes, turning, until it reaches 165°F.
  2. Transfer chicken to a shallow container and refrigerate promptly. Mix pesto and yogurt in a separate bowl; keep refrigerated until the chicken is cold.
  3. Spread each tortilla with pesto yogurt, leaving a 1-inch border. Add lettuce, cold chicken, carrots, and cucumber sticks, distributing filling evenly.
  4. Fold sides inward and roll tightly. Cut across the middle and pack cut-side up in a chilled container; assemble on the morning of eating for the best texture.

Kitchen note: A lettuce layer keeps the moist filling from soaking directly into the tortilla.

Substitution: Use sunflower-seed pesto without nuts, checking its label for milk or other allergens.

Storage: Refrigerate shallow portions at 40°F or below within 2 hours; eat within 3 days. Transport with ice packs maintaining 40°F or below. Pack crisp components separately.

Lentil Cucumber Feta Boxes

4 servings · Prep 20 min · Cook 0 min

Ingredients

  • 2 cans lentils, 15 ounces each, drained and rinsed
  • 1 cucumber, diced
  • 1 pint cherry tomatoes, halved
  • ¾ cup crumbled feta
  • ¼ cup chopped parsley
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 4 small whole-wheat pita breads

Method

  1. Drain rinsed lentils thoroughly in a sieve so extra water does not dilute the dressing. Pat cucumber pieces dry if they release a lot of liquid.
  2. Whisk oil, lemon juice, salt, and pepper in a large bowl. Fold in lentils, cucumber, tomatoes, feta, and parsley without crushing the soft lentils.
  3. Divide the salad into four lidded lunch containers. Pack pita separately so it stays dry until the meal is eaten.
  4. Refrigerate immediately. Stir each portion before eating to redistribute dressing, then scoop with pita or tear the bread into pieces alongside the salad.

Kitchen note: Choose firm cucumbers and drain canned lentils well to keep the boxes pleasant after an overnight chill.

Substitution: Replace feta with diced firm tofu and use gluten-free bread instead of pita if needed.

Storage: Refrigerate shallow portions at 40°F or below within 2 hours; eat within 3 days. Transport with ice packs maintaining 40°F or below. Pack crisp components separately.
