Build supper around a steady schedule

Use the slow cooker with a plan for what goes in first and what belongs near the finish. Slow Cooker Comfort offers chicken white bean stew, turkey pumpkin chili, sausage lentil casserole, and other soups, stews, and tender mains. Technique notes address thawed ingredients, keeping the lid closed, browning when a recipe calls for it, and adding delicate vegetables later. Measured steps give appliance settings, cooking windows, and checks for meat temperature or lentil tenderness. Suggested menus and a shopping list help connect the recipes to the week ahead. This Junction Table collection by CrownThrive, LLC gives slow cooking a clear sequence from preparation to the final stir.

  • Slow-cook thawed chicken and beans, then add kale near the end.
  • Brown ground turkey before blending pumpkin puree into a slow cooker chili.
  • Check lentils for tenderness and stir parsley through sausage lentil casserole.

Chicken White Bean Stew

6 servings · Prep 20 min · Cook 300 min

Ingredients

  • 1½ pounds thawed boneless skinless chicken thighs
  • 2 cans cannellini beans, 15 ounces each, drained
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 1 onion, chopped
  • 3 cups low-sodium chicken broth
  • 2 garlic cloves, minced
  • 1 teaspoon dried thyme
  • ¾ teaspoon kosher salt
  • 3 cups chopped kale
  • 1 tablespoon lemon juice

Method

  1. Place thawed chicken, beans, carrots, celery, onion, broth, garlic, thyme, and salt in a 5- to 6-quart slow cooker. Stir gently and cover.
  2. Cook on low for 4–5 hours, keeping the lid closed, until chicken reaches 165°F and carrots are tender. Do not use frozen chicken.
  3. Transfer chicken to a board and shred with two forks. Return it to the cooker, stir in kale, and cook on high for 15–20 minutes until kale softens.
  4. Stir in lemon juice and taste the broth before adding extra salt. Ladle into six bowls, distributing chicken, beans, and vegetables evenly.

Kitchen note: Use thighs for a forgiving texture, and check the thickest piece with a thermometer before shredding.

Substitution: Replace kale with baby spinach; stir it in for the final 5 minutes.

Storage: Refrigerate shallow portions at 40°F or below within 2 hours. Eat within 3–4 days; reheat cooked leftovers to 165°F.

Ingredient allergens: Check labels and cross contact.

Beef and Mushroom Barley

6 servings · Prep 25 min · Cook 480 min

Ingredients

  • 2 pounds thawed beef chuck, cut into 1½-inch cubes
  • 1 tablespoon olive oil
  • 12 ounces mushrooms, halved
  • 1 onion, chopped
  • 3 carrots, sliced
  • ¾ cup pearl barley, rinsed
  • 4 cups low-sodium beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • ¾ teaspoon kosher salt
  • ¼ teaspoon black pepper

Method

  1. Heat oil in a large skillet. Brown beef in two batches for about 3 minutes per side, then transfer it to a 6-quart slow cooker.
  2. Add mushrooms, onion, carrots, barley, broth, tomato paste, thyme, salt, and pepper. Stir the paste into the liquid, cover, and cook on low for 7–8 hours.
  3. Check that the beef is fork-tender and at least 145°F, then let it stand at least 3 minutes before serving. Stir barley from the bottom so it is evenly distributed.
  4. If stew is thicker than you prefer, add ¼–½ cup hot water. Taste and divide into bowls while the barley is tender and the broth remains spoonable.

Kitchen note: Pearl barley softens faster than hulled barley; use the stated type.

Substitution: Use boneless lamb shoulder instead of beef, checking for fork-tender meat and the same minimum temperature.

Storage: Refrigerate shallow portions at 40°F or below within 2 hours. Eat within 3–4 days; reheat cooked leftovers to 165°F.
